About This Class

In this class, I will teach students how to make a delicious Paleo dish; Wild-Caught Salmon on a Bed of Organic Sautéed Kale with Organic Blistered Cherry Tomatoes. Salmon and kale cook quickly so this is a great go-to when your short on time!

Within this class, I will also be explaining important Paleo diet principles and cooking techniques I've learned over the years.

Passionate about Paleo

My journey with the Paleo diet began two years ago. I was a healthy 30-something who ate right and went to the gym almost every day. My friends and coworkers all looked to me as the pillar of good health.

Suddenly, I came down with a form of alopecia which made me lose the hair on my head, then my facial hair, and finally my eyebrows. It was difficult. The doctors ran blood tests and told me that I was 100% healthy, that my hair loss was just from stress. 

I began searching the internet every night for suggestions from other people who had gone through this. I kept reading success stories with the Paleo diet (all clean, organic meats and vegetables) as a cure to alopecia. I figured I had nothing to lose, so I began the 30 day Paleo challenge. It gave me something positive to focus on: nourishing myself with nothing but the best, cleanest organic foods so that my body could absorb every vitamin and nutrient it needs to be healthy. 

Within 5 months, I saw major changes. My hair began to grow back, even thicker than it was before! I also stopped suffering from seasonal allergies and eczema that I had dealt with my whole life.
