About This Class

In this class, you will learn to make spicy Indian style dip also called as Chutney.


Following ingredients are needed for Chutney.

1.Big Eggplant

2.Medium size onion

3.Mustard seeds

4.Cumin seeds

5.Coriander seeds

6.Whole red chilly

7.Turmeric powder


9.Garlic cloves

10.Curry leaves


12.Salt and sugar


14.Garam masala

All the ingredients are easily available at Asian or Indian Grocery Store.

Eggplant Chutney Recipe

Heat the pan and add oil to it. When the oil is hot add mustard seeds and cumin seeds. Let the seeds crackle. You can cover the pan with mesh if you want to avoid spill over.

Add onions. Cook it till it gets brown. 

When onions are nice brown, add other ingredients ……

Add 5 cloves of garlic.

Add small pieces of ginger (chopped into small pieces), one whole red chilly. You can adjust it according to your taste.

Add 1 teaspoon of coriander seeds, 1 teaspoon of cumin seeds.

Add curry leaves.

Add 1 teaspoon of turmeric.

Add 1 teaspoon of Garam Masala.


Mix all ingredients and let it cook for ½ to 1 minute while stirring it continuously.

Add sliced eggplant.

Mix it and add ½ cup of water. Cover it and let it cook for 15-20 minutes or until eggplant is tender but NOT mushy.

Check it in between.

Add 1 teaspoon (according to your taste) of salt.

Squeeze ½ lemon.

Add 1 teaspoon of sugar.

Here is our delicious spicy chutney ready.

You can eat it with paratha (Indian bread) or rice.
