About This Class

Are you frustrated with spending all your money on last minute take-out lunches that leave you wanting to take a nap rather than fueled up with energy? Are you tired of boxed frozen meals that just aren't satisfying your cravings? Are you looking to eat healthier but you don't have a lot of time? Take back control of your meals, your time, and your health with this easy class.

Veronica Lamb from Radiant Life Consulting will walk you through creating quick pasta freezer meals that will give you easy options for lunch or dinner. Healthy doesn't have to be bland or tasteless or take a lot of your time. In fact, you can gain back your time by meal prepping and batch cooking.

Learn some of her key techniques to ensuring your pasta holds up to both the freezer and the reheating process and how to get crisp veggies in your finished meal so it tastes fresh & satisfying. You will see some of her personal favorite recipes and protein/veggie combinations with marinara sauce, pesto, and a made from scratch olive oil sauce. You will be shocked how healthy can taste so good! The worksheet will help you discover your favorites and double as a shopping list for your trip to the store.

The JUST Eats series focuses on simple habits, requiring simple tools, accessible to every budget, and easily customizable to your needs. These habits will naturally and easily allow you to move away from overly processed foods and refined sugar. Many of the videos include bath cooking techniques that easily translate to large family meals or community gatherings. Vegan, Vegetarian, Gluten and Dairy free options are discussed in the videos equipping you to meet the needs of you or your loved ones.

Make healthy choices your easiest choice by joining this class and beginning your batch meals today.

Creative and so practical! Very well explained!
Wow, Veronica! You're so clear and these look delicious. Now I have a use for all those dusty mason jars and something healthy to eat on those grab and go lunch days, besides a plate lunch.

You could say I'm a Jane-of-all-Trades. My day job for the past 10 years has been teaching hundreds of Architects, Engineers and those in the Construction industry 3D modeling and analyzation tools, both locally and nationally. Fortunately, this has helped develop my teaching skills as well as enable me to learn the ins & outs of virtually supporting clients with virtual meetings, webinars, and e-courses.

After hours, I was busy trying to change the world for the better. As a founding leader of a non-profit, I weekly counseled small groups of people in spiritual life direction and pursuing justice in our community. We started an anti-human trafficking campaign partnering with faith based and secular groups to push legislation through to protect victims and punish perpetrators. During this time, I also started the first safe house for trafficking survivors in our state and regularly worked until the wee hours of the morning with law enforcement and survivors. Over the years, I've personally mentored over 100 women and children through incredible life change and have been blessed to see their journey of amazing strength and determination.

In my free time, yes, I'm being a little sarcastic here about free time, but I  genuinely enjoy swimming, hiking, inspiring other women to join me in running in 10k's, cooking dinners with friends, trying new restaurants, and traveling through Southeast Asia.

My health issues started out minor, coming & going, and odd nuisances until they eventually grew into life altering problems. This was unacceptable to me. That was not the life I was called to and I was determined to get to the bottom of it. Doctors were having trouble explaining all my symptoms and traditional medicines weren't curing me. I had previously been a licensed cosmetologist (did I mention Jane-of-all-trades?), so it didn't take me long to see traditional personal care products and prescribed medicines weren't helping my out of control acne and skin issues either.

Thankfully, I saw a naturopath and received clarification on which foods I had grown overly sensitive to. Initially, going through the process of changing so much about my diet made me feel lonely and defeated. It seemed I was constantly surrounded by food that would make me sick. It was an incredibly stressful time. My main complaint was this, how could I focus on changing the world when I was constantly thinking about food?

The journey of getting back to basics was a hard one, but eventually I got into a routine. Life became healthier, easy going, and productive again, even through all 3 trimesters of pregnancy. And then I had a baby. As a new mom, I felt blindsided by my new baby's extreme negative reactions to all of my "good-for-me" foods. I had to go through the entire process of changing our diet all over again to address her sensitivities all while caring for a newborn, working both the day job & nonprofit, and feeling the consequence of one wrong ingredient causing incessant pain & crying in our newborn. It was exhausting! But we made it through and I am now happy to share the learned knowledge through my experience with others like you.

I never could imagine how the random pieces of my life could all pull together in a unifying way, but now I can see how it all fits together as if in a master plan to bring Radiant Life Consulting into being. Diet Changes, Skin/Health Care, Adventure, Motherhood, Changing the World, Spiritual Direction, Mentoring, Virtual Teaching & Trainings = the birth of Radiant Life Consulting. :)
