About This Class

Indian Cuisine is one of the exotic cuisines that is popular throughout the world. The variety of spices we use is unlimited and it can be intimidating sometimes to start cooking Indian Cuisine. This class is an introduction to Indian cooking, especially for Indian gravies. 

This class focuses on the GRAVY part of the Indian cuisine. We have a lot of different gravies that we use to side with our Rotis and Rice. I will break down the gravy into simple 4 steps that you can follow to make some amazing gravies. It is like baking a cake. You vary the ingredients to get the desired consistency and flavor.

I have divided the class into three parts:

  1. Components of a gravy - Here you will understand what are the different ingredients used in a gravy and how they are proceeded with in making a gravy
  2. Decoding Indian Gravy - Any gravy will definitely made of all the 5 components above. In this lesson I show you my favorite recipes and how they are made of the different components discussed above. 
  3. Demo Gravy - I want you to get acquainted to gravy-making. So I will start with the all time favorite recipe of mine. It's simple and easy recipe of mine. I show you how every component added one after the other make this beautiful, rich gravy.

Components of the gravy

FAT

  • Ghee

SPICES

  • cinnamon

  • fennel seeds

BASE

  • Onion

MAIN

  • Paneer
  • chicken
  • egg
  • peas
  • mushrooms
  • prawns
  • mixed vegetables

FINISHING INGREDIENT

  • corn flour
  • coconut milk
  • milk
  • curd
  • fresh cream
  • sour cream

Ingredients of Paneer Butter Masala

FAT

  • 1 tbsp Butter

SPICES

  • 1 tbsp ginger garlic paste
  • 1 tbsp cumin seeds powder
  • 1 tbsp coriander seeds powder
  • 1 tbsp red chilli powder
  • 1 tbsp garam masala
  • 1 tbsp dried fenugreek leaves (Kasoori methi)

BASE

  • 1 onion
  • 3 tomatoes

HERO

  • 100g Fried Paneer

FINISHING INGREDIENT

  • 1/4 cup fresh cream

STEPS INVOLVED

  1. Start by preparing the main ingredient. Fry the paneer to slight golden brown color
  2. In a pan, add some butter. Add in the onions and cook until they become translucent
  3. Add in the tomatoes and cook for another 8 mins until the tomatoes are cooked thoroughly. 
  4. Add in the spices and mix well. Cook for another 2 mins for the spices to blend nicely. 
  5. Add in quarter cup of cream and blend well. Simmer for another 2 mins
  6. Add in the paneer and let it soak in the gravy for another 5 mins. 
  7. Transfer to a serving bowl. Garnish and serve with Rotis and rice.
