About This Class

In todays lesson, we shall be making a large amount of shortcrust pastry and cooking both sausage rolls and jam tarts. However, the recipes have been given to include the only the amount of ingredients you will need to make the exact amount of pastry for either sausage rolls or jam tarts.

Sausage rolls are delicious pastry- wrapped sausages, are quick and easy to make and if not needed immediately can be frozen for later. They are associated with party and picnic food but they are so versatile they can be eaten as a main meal with salad, chips, beans and a whole host of food.

There are various stories about the origin of this savoury. Historically one of the first well known and most colourful stories was in the 17th century and involved Oliver Cromwell knocking at a farm house door and demanding a pig wrapped up like a pork pie. It’s quite an amusing story but too long to tell here. However, food historians generally believe that the sausage roll was developed in the 18th Century.

Jam Tarts are a delicious sweet treet loved by children and adults alike. These can be large tarts serving 5 or 6 people or very small individual servings.

Although the word tart is documented as early as the 14th century, it usually referred to tarts with meat fillings served at large banquets. It was the 18th century when fruit became more popular as a filling – this may have been the fore runner of the jam tart as we know it today although these tarts would probably have had lids – which made them pies!

The true English jam tart consists of a round pastry case filled with jam or lemon curd and baked in the oven until cooked. It does not have a lid.

These little sweets are typical of an English tea. They are easy and inexpensive to make.
