1. German Beer Introduction: Welcome to this class and Deutsches BIA or German beer. I'm your instructor for the class. My name is Marty Natural Army, B J C P Judge and a professional beer judge. I'm you out for a Beer for Dummies and Home Brewing for Dummies, and I'm an adviser and instructor at the Business of Craft Beer Certificate program outside of Chicago. 2. German Beer Culture: in this segment, we're gonna be talking about German beer culture, and I think it's fair to say that there are few countries in the world where beer is as ingrained in the local culture as it is in Germany. Now anybody who travels throughout Germany is likely to encounter a variety of different beer glass classes being uh served depending on which Veer style is being ordered. Uh, in this graphic you'll see in the lower left hand corner. That's the classic Who are mass crew? That's the one leader size serving that is used at many of the beer festivals. This hold just about 33 ounces of beer. Next to that, to the right, is the famous beer boot. It's actually known as a steeper beer steeper, Um, and this comes in various sizes. In the lower center is the beer chalice of Berlin, where they certain Berlin devices above that is what's called a stana is a very tall and narrow glass that they served close fear in uh, next to that to the right, You see the vice beer bites and beer glass up and referred to as a vase or a vase because of its size and shape. And, of course, the very, very traditional German beer Stein with the his pewter lid. And no conversation about German beer would be complete without talking by German beer food . These are classic classic beer food being served, starting with German potato salad, bratwurst with sauerkraut, roasted chicken on the grill, something called Schwein hawks, which is pork, nickel and, of course, the ever present soft Pressel with spicy German mustard. These foods and more are found at the many festivals that take place throughout Germany, especially in the fall. Of course, we're talking here about the grandest of all. It's the Octoberfest in Munich. There are many, many October Fest to take place through up a very Andrew T. But this is the one that is world famous. Some things that most people don't know about Octoberfest is that going back hundreds and hundreds of years, harvest festivals were held throughout Europe, and this was basically the townsfolk in many of these small towns and villages celebrating a successful harvest. But this all took on a different meaning in Munich in 18 10 in the month of October. Specifically, that's what a very high profile marriage took place between Crown Prince Ludvig later became King Ludwig, the first when he married Princess Theresa of Saxony Hilbert houses. They were married on the first Saturday in October, and it was decided that they were gonna have two weeks of partying prior to that. So the party started in September, lasted for two weeks and ended on the first Saturday in October and nets how Octoberfest today follow a schedule. The dates change from year to year, of course, based on the calendar. All Octoberfest star officially with the mayor's declaration of oh softies when he taps the very first, uh, keg of beer. Each October, Fists begins with a daily parade procession that includes horse drawn beer wagons from UNIX breweries, and the festival itself is held in the fields in front of the city gates. The fields have been named Crazy Adviser, which translates Theresa's fields in honor of the Crown Princess. Locals have since abbreviated the name simply to reason. Octoberfest is not the only festival that takes place in Germany. In fact, that's the one that's world famous, and that's the one that has six million visitors from around the world. A lesser known, but no less important festival. Two Germans and specifically the various is the stock BFS, or Strong beer Festival. This takes place in March, and if you want to avoid the crowds and if you want to avoid all the foreigners in Munich, then I suggest you plan your visit to Munich for the month of March. Early on, especially, you can see that this is the strong beer festival that is four people in Munich and Bavaria . So now let's switch gears just a little bit too. German hops for many, many years and still in certain places about the world. German hops are revere. There really cries or there for what they give to beer, and you could see that they're grown throughout the country, but not any more than they are in. Very, which were is where most hop fields are. Interesting thing about German haps. Germany is home to three of the world's for noble varieties, Holler Town, the technology, and these are what we call noble option. For those of you who are not familiar with noble halfs or the definition of noble, half a noble happens simply a hop that has still grown in its place of origin. 3. The German Beer Purity Law: very often when talking about German beer, the topic of the German Burak purity law comes up, so I'm gonna spend a little time talking about it here. First of all, when it was written many, many years ago, very was still a free steak. It did not belong to the country we know is Germany today. So it was actually known as the Bavarian Beer Purity decree before it became the German Beer Purity Law, and you're a couple of other fun facts about it. It was decreed on April 23rd in the year 15 16 which means it's now about 504 years old. It was written by a Bavarian Duke Ville home. The fourth part of it said that Bavarian brewers could only use barley, hops and water to make beer, and that's the part that most people focus on because of that, it was considered the first ever consumer protection law. So this is a look at a facsimile of what that document may have looked like. You can see his Coffee Ryan high school boats, and it's written in its original German. It also contains five relatively short paragraphs. What's interesting is only one of those paragraphs has to do with the ingredients allowable on beer and take a look at the last sentence in the second paragraph. I know it's rather small writing, but you could see where it says Gerston opened Bassa, and that is multi ups and water. That small paragraph is the only part that refers to the ingredients allowable in beer. So what was the brain heights about all about? It was created for basically three reasons. It's a limit, a brewers profit and to keep beer affordable for citizens. Beer was part of the daily diet and therefore important for nutrition. A LA kept brewers from price gouging and keeping beer prices in check. It also addressed public safety concerns. Brewers sometimes added questionable ingredients to the brew. The results of this could be dangerous and even deadly. By limiting them to specific ingredients. Breakers could be assured that their next year was not going to be their last. Lastly, the law banned brewers from using wheat and rye, which benefited German bakers by forcing brewers to use only barley wheat remain cheap and easy for bakers to obtain. This ensured that bread and baked goods would be available for everyone. Over time, there were changes made to the Ryan High School boat. In addition, the division of wheat and right as allowable grains, as well as the addition of yeast as an ingredient understand that 500 years ago yeast wasn't fully understood. Brewers didn't what it was, where it came from or how it worked in the beer, so it wasn't considered an ingredients. But Ryan High School vote was followed by German brewers until 1987 when the European Union Court of Justice declared that the law couldn't be used to ban imported beers. This allowed beers made elsewhere to be imported into Germany, even if the brew wasn't made in accordance to the Rhine High School. And then, in 2005 a court ruled in favor of German brewers who wanted to make beers that did not comply with the run high school. Both but that method. The brewers couldn't legally call these beverages beer. Despite the ruling, some brewers still strictly follow the run high school boat, and it's it's not compulsory. So why has the right height school boat endured these 500 plus years? Well, in a word tradition. An argument could easily be made that the German beer purity law is outdated. Some brewer's claim that it prevents them from being creative and competitive. In today's world wide market, However, German beer traditionalists don't want the law changed, and many German beer drinkers seem to agree. A survey completed by the German Brewers Association found that 85% of German beer drinkers support the run high school bullet laws. Purists, on the other hand, argue that with the wide variety of hops, malts and yeast, there is room for creativity within the law. 4. Popular German Beer Cities: in this segment, I'm going to spend some time talking about popular German beer cities, and there are no shortage of them before running off to Germany. However, I think it's important that travelers understand the German beers are regional. Unlike here in the United States, where you can get pretty much any beer style anywhere within the state's. In Germany, it's a little bit different. You can't expect to find all the different German beer styles found throughout the country . I would suggest that if you're Target is to visit places where beers the focus that these of the city's who might want to consider starting working clockwise from the golden era pointing Northwest that would be clone or cologne. And you have Dusseldorf, Dorfman's Berlin, Bomberg and Munich and we're gonna take a closer look at all of these. Berlin is once again the capital city of all of Germany, and it is famous for their Berliner vice. If you are to travel there and order Berlin advice, there's a good chance that bartender would ask you if you wanted it served Myth shoes, which means with a shot. Now the glass up front and center you see that's that would be a Berliner vice without a shot. Glass on the left would be a brilliant advice served with a shot of volume meister, which is Woodruff, and the glass on the right is the, uh, give that a shot of him bear. I know it looks like it's spelled or pronounced him beer, but it's actually him. Bear in German, and that means raspberry, They thought. Process is that most people don't or can't deal with the acidity in the Berliner vice. So by providing this shot of sugary syrup that it would soften the acidity on the palate. In the city of Who or cologne in the French tongue. This is the home of Push, which is a protected appellation. But this is the beer made by approximately two dozen breweries within the region of Hung. And, uh, this is a beer. It's one of the few beers in the world is considered a hybrid. It's fermented with aliens, but it undergoes a cold limitation aging. In the city of Darkman, there is a beer style that's noticed dark mender, and it's often referred to his export. At one time it was the beer that was exported the most out of Germany. What makes this particular beer style somewhat different and interesting is that it's not quite as dry and happy as Bierce in the north of Germany. And it's not as multi and sweet as many of the beer styles from the South Germany. It has a perfect balance of Maltin hops in the city of disorder. This is the home of fear, which is one of the oldest beers in Germany. Outs means actually means also. This is old here. This is another hybrid style also fermented with alia use. But it undergoes a cold aging process in the city of Bomberg in the region of Franconia, about three hours north of Munich is bombed there. And this is the home of practically 22 breweries, most of which, if not all of which produce the local beer called Rock year, which is a smoked beer. Men, of course, there is the capital city of Munich, capital of very that is. And here you see a picture of the Platz in the old town. The arch starts and you see a picture of the newest our house. And this is where the famous glockenspiel plays every day. Munich is home to what's called the Big Six Breweries of Germany. And here you see off Boy, I can assure spot Augustine er, living boy and around her, and you can expect all of these breweries to produce these beers, buck beer and all its derivatives in season, of course, Munich hellis ducal, which is the light of the pale in the dark versions of the Munich Lager. Then there's the German Sharks beer, which is the black beards and like a black pilsner and the world famous Weizman beer, also known as vice beer. 5. German Beer Styles: in this last segment, I'm going to focus. I'm German beer styles. And even though I've mentioned many of these already, I'm going to break them down into the beer style guidelines. Before I do that, I just want to give an overall view of the the the most popular and standard German beer styles. Obviously, Germans are known for the production of lagers and rightfully so, and that's the list you see in the center of this graphic. But it's important for people to know that Germans also produce ales and going back hundreds of years ago. That's all they produced prior to the invention of compressed gas refrigeration and the discovery of lager yeast in the 17 and 18 hundreds. So you see that on the sales side they produced bites and very vice beer and all of the wheat beer styles. Berliner Vice goes a great Sir 16 Hein of Israel top fermenting beers, then in the lager category, have the tooths Department of Bock beer and all of its derivations. Mattson beer, which is known more often by its other name, October pressed here, the new new tennis, your Dalton beer, the shots here and then the hybrids that I've talked about briefly push and help you now for the beer style guidelines. Again, I'm referring to the Beer Judge certification program and their beer style guidelines. German beer styles appeared at least nine different beer style categories with multiple sub categorizations. Let's take a look at those in the pale moth, the European lager category. We have Munich Ellis Best Beer in Hellas Box In the pale, bitter European beer, We have German life stevia, which is essentially like beer, Khost, German hellis export and German pits in their amber multi European lager category. We have Mets and beer well, beer and ducal buck in the amber bitter European lager. We have idea. Tell a beer, which is cellar beer in the dark European lager category. We have music Dugan and shots view in the strong European beer category. We have double buck and Ice Book in the German weak beer category. We have fights India and vice beer and the difference between those two names. I've mentioned them a couple of times already. Vice in means wheat so fights and tears wheat beer vice means white, so vice beer means vice beard and both of those actually mean they both refer to the week based beer of Bavaria. Duke invites in is simply a dark version of whites and beer invites. And Buck is simply a higher strength version of fights and beard in the European sour beer category, which is dominated by a lot of beers from Belgium, the only German entry. And this is the Berliner Vice. And in the historical beer category, we have go ZA and listing Hiner. Neither of these have their own beer style category designation from the B J C P, but I'm assuming that someday soon they both will close.
