1. Welcome!: Welcome to the course for chocolate lovers only. In this course we will be making for delicious chocolaty treats. The first y and our sweet potato brownies. Next up, our peanut butter cups. Third and dairy free mockup and last, avocado putting, like most of my courses, all of the recipes here, our dairy free and gluten-free. If you want more info on how to bake without dairy and gluten or cook without varying gluten. Please see my other courses. I have a few of them. Like always, the recipes in this course are easy. They're delicious. They don't require lots of crazy ingredients, maybe a few that you don't have on hand because we do use alternative flowers. In this course, we'll be using coconut flour to the exact. There are three ways that I bake with chocolate to ensure that it's dairy free. Number one, I make my own chocolate and I typically do that with a high-quality cocoa. I've been using Camino for awhile just because easy to find in my local grocery store, but high-quality cocoa and then some honey. And that combo makes a really good chocolatey flavor. But in quality ingredients make a big difference, especially when we're baking gluten and dairy free. So that's my number one. My number to go to our enjoy life chocolate chips. So they only have three ingredients. Brown sugar, cocoa mass and cocoa butter. Cocoa butter isn't dairy, it's actually from the cocoa bean. So they are a good go-to. I really like them. They can be quite expensive. So by the minus l, look for a cheaper option. You can maybe order them online, but enjoy like chocolate chips are really awesome. These are the mini ones. They also make a dark chocolate chip, which is good. Lastly, if you can find a good-quality chocolate bar, the higher the cocoa amount in it, typically, the lower the rest of the ingredients. So if you get a dark chocolate bar like this, 85 percent cocoa bar, it won't have any milk products. So the ingredients are literally cocoa mass, cocoa powder, cocoa butter, brown sugar, and vanilla bean. So the darker the chocolate, the less chance of it having any milk products in it. If you're okay with having dairy, like knock yourself out, use whatever kind of chocolate you want. But I personally feel better when I avoid dairy products. So these are my gotos when I'm baking anything chocolate, but I need it to be dairy free. I look forward to seeing you in class with the students. 2. Sweet Potato Brownies: The first thing we are making our sweet potato brownies. So what you'll need is a good size sweet potato. Like a medium is sweet potato. You will need some cocoa, some coconut flour, chocolate chips, totally optional, but I really like chocolate chips in my brownies. Honey, coconut oil or coconut milk, canned coconut milk, ideally, some salt, three eggs, baking soda, baking powder, and vanilla, whoever is poet, vanilla. Vanilla, also optional, but I like vanilla in my bromines. The first thing we're going to do before we can mix everything up is to bake our sweet potato. So I'm going to set my oven for, for 25. When I cut my sweet potato in half, I actually don't care how you cook your sweet potato, however you're comfortable doing that. But this is how I like to cook mine. So I'm gonna cut that in half and then put it into a baking dish so it can steam itself. I'm going to pop it in C of it. And that'll cook for about 40 minutes or until the inside is soft enough that we can mix it up. So I'll see you in a little bit. Well, it's certainly smells like the sweet potato is done. So I'm going to pull it out. Make sure it's soft. Oh yeah, that's nice and cooked. So I'm going to let that cool off just enough so I can use it. We're going to put it in the ball. We're going to immediately add the coconut oil, a quarter cup of coconut oil, and a quarter cup of our honey, because it will melt a lot easier that way. So I'm going to let it cool off just a little bit until it can handle it a little bit better. So I'm going to put the sweet potatoes and the ball will start breaking it up. And I'm gonna take my fork, get the outside of the sweet potato out of there. Do it well kill you to eat it, but might not taste good to help a big chunk on the outside of it in there. All right, then I'm just going to match that up. So it's nice to have a soft touch. Which again, if it's cooked all the way through, not hard to do. I'm going to add a quarter, a quarter cup of coconut oil to this. And because the sweet potato is hot, it will not it really nicely, which is awesome. Cup of honey. And I'm going to mix those two in them. After this. It doesn't really matter what order you put stuff in the ball, but I'm going to start with the coconut milk will do. Ideally your coconut milk is more mixed up then minus, minus is a little bit separated, but it's hard to shake. So I'm gonna do a quarter cup of coconut milk. A quarter cup of coconut flour. Coconut flour is really, really absorbent. So that's why it's the only flower that we're using and we're only using a quarter cup because we're also putting in a quarter cup of cocoa powder. If you've cooked miss me before, you know, I'm not super, super exact. Three eggs. Dash of salt. A quarter teaspoon of both baking soda and baking powder. And before you go too much further, I'm going to take my coconut oil, oil the pan. So I'm just going to grab a paper towel. So the pan size I'm using is a seven by nine Pyrex glass dish because I really like it, but you could easily use an eight by eight. So I'm just taking the coconut oil. The oil, the pen however you want. Just makes it a little bit easier to get another NADPH. Mix this all up. Ooh, I don't want to forget my vanilla. Just a touch of vanilla, like I said, but it was totally optional. Mix that up real well, if you want to add chocolate chips, I'm going to add some enjoy life chocolate chips. I like chocolate chips in my brownies, again, very optional. And I'm going to pour it into my well oiled pin. And their oven is set at 350. We're going to put it in the oven. And we're going to set our timer for 45 minutes. And I'll see you then. I feel like like I can often well, when stuff is done baking and the smell so good. So I'm going to turn that up enough. And it looks awesome. It's not jiggly, so we're good. That's what they look like. I'm going to let this cool off and we are going to give them a try. I'll clean up in the meantime, seen a little bit. So I'm just cutting them, Brahmi, going to pull that out. These are very moist fact bromines. So should the coconut milk into really the sweet potato. So awesome. If you don't eat it all in the first go, what you're gonna do is put a lid on it and store it overnight and the coconut flour in it will actually absorb more moisture. Believe in better tomorrow. 6.
