Congratulations, you've completed my class on English Cream Tea Made Simple - Scones Are Easy!

Now it's your turn to put your newfound skills to the test. Get out your equipment and ingredients then decide what scones you are going to make - fruit, plain or cheese.

Follow my recipes at first and then experiment!

                                                                                 Be Bold!

If you feel confident, replace the sultanas for another dried fruit - cranberries or cherries. Chopped up apricots and a teaspoon of vanilla extract is a favourite of mine

Add your favourite sweet spice (about a level teaspoon), or the finely grated zest of an orange to the plain scones.

As for a savoury scone, add two tablespoons of crumbled, crispy bacon to the basic mix. Try Stilton with a tablespoon of chopped pecans.

                                                                                 Be Brave!

Once you've got the hang of things, be more adventurous!

Replace some of the flour with cocoa powder, add dried cherries and chocolate chips, serve with black cherry jam, topped with cream and a fresh black cherry for Black Forrest Scones.

Add rosewater, chopped toasted pistachios and finely chopped rose petals and you have a Persian Scone.

A teaspoon of lavender flowers in the scone mix will fill your kitchen with the scent of Provence.

Make a Japanese inspired scone by adding matcha tea powder and some yuzu juice, serve with a jasmine preserve.

Replace the cheese with the same amount of haggis for Scones Ecosse - Scottish Scones.
