This time we tackle wine and cheese pairings and we have cheese expert Chris George to help guide us. Chris says (with his English accent):
"Cheese is a truly amazing food. Treasured by many, reviled by a few and, despite being a staple of our diets, misunderstood by most. Cheese has sustained us for millennia in its many glorious forms - be it dense and rich, soft and mold encrusted or blue veined and pungent - yet it originated from just a few simple ingredients: milk, rennet and salt, and long before anyone had even heard of Louis Pasteur."
And wine...well...it goes terrific with cheese!
This class will give everyone from the beginning wine drinker to the experienced oenophile some easy pairing guidelines.
We will cover topics such as:
-Going to or hosting a party? What type of wine/cheese should you bring/have?
-How to identify what you like (or don't) about wine and cheese
-Tips to pair your wine and cheese
You'll be able to ask anything about wine and cheese and get helpful tips to pick the perfect wine to go with any situation.
We will have at least four great value delicious beverage selections and scrumptious cheeses specially selected to not only be wonderful on their own but that compliment each other to bring out the best pairing possible.
All cheeses selected will be naturally gluten free as well! Both regular and gluten-free crackers will be provided.
With these nuggets of knowledge, you'll be in the coolest wine-nerd and cheesiest authority in the room!

Chris George began working for the London based cheesemongers Neal's Yard Dairy in 1995. In 2004 he set up and ran their tastings and education programme until he moved to Brooklyn in March, 2011. His teaching has involved working with a wide variety of institutions including The School of Artisan Food in Nottinghamshire, Rick Stein's Cookery School in Cornwall (both in the UK), The San Francisco Cheese School in California, Murray's Cheese Shop in Manhattan and The Bedford Cheese Shop in Brooklyn, New York. In addition Chris has worked in TV and radio, organized and given talks at many major food festivals, and judged at The British Cheese Awards, The World Cheese Awards, The Great Yorkshire Show and has regularly visited producers throughout the UK, Europe and further afield.
