Rolando (chef) teaches knife skills classes free to all staff. Customers wanted to know if they could come too, so we've decided to open these up to any customer too!
In Knife Skills 101, you'll learn the basics of knife safety, how to hold a knife, 3 important cuts, and you'll learn how to break down onions, garlic, tomatoes, carrots, potatoes, tomatoes, and fresh herbs. You'll also have the opportunity to take a practical test. If you pass, you get to take Knife Skills 102!
Please wear closed-toed shoes, long pants, and a hat (or be prepared to wear a hairnet).
Rolando has probably cut close to a million vegetables. Before helping start Clover, he worked with Thomas Keller at The French Laundry in Napa and as a culinary professor at Johnson and Wales University in Providence.
