Tortellini is a ring-shaped pasta filled with meat and cheese and in Italy served "in brodo" in chicken broth, but in the states is often served with tomato or cream sauces. Whereas Tortelloni, is the larger version, which is stuffed with just cheese. We'll learn how to make Tortellini from scratch and then eat it with a simple homemade tomato sauce.

Diane is a third-generation Italian. She loves cooking and has been assisting with a small cooking school in San Francisco for two years. She just got back from a trip where she visited the Emilia-Romagna region in Italy, where Tortellini was born. She learned how to make the dough, filling and broth that it's traditionally eaten with and she wants to share these techniques with others who love eating pasta!
